Made from Chardonnay grown at Clayhill, in the Crouch Valley in Essex - an area quickly becoming recognised for it's potential to grow excellent fruit for still wines here in England.
The grapes were whole-bunch pressed, cold-settled and then moved to a ceramic 'barrel' for fermentation. It was left to age in ceramic for 10 months, during which time it naturally completed malo-lactic fermentation. The wine was then moved to 2 oak barrels for further ageing, one 3 years-old and another more than 10 years-old. The finished wine was bottled by hand, with no fining or filtration, in March 2025 with only 530 bottles produced.
This Chardonnay has a rich, full nose, with citrus and stone fruits. It’s fresh and zesty on the palate with great acidity, texture and a super long finish. While it has spent time in oak, this barely comes across on tasting, and has been compared to an un-oaked Chablis.
