Winemaking
Oxfordshire-grown Solaris and Bacchus hand-picked in to small crates on 8th October 2025. Whole-bunch pressed, cold settled for 48 hours. Fermented in a Clayver ceramic ‘barrel’ using a 'pied de cuve' to start the fermentation. The wine naturally underwent malo-lactic fermentation and was aged in ceramic for 3 months before being moved to 2 old French oak barriques and aged for a further 3 months.
Buckinghamshire Bacchus hand-picked in to small crates on 31st October 2025. Whole-bunch pressed, cold settled for 36 hours, before being racked to a stainless steel tank for fermentation (again using the pied de cuve). Natural malo-lactic fermentation and settling over winter in tank.
The wines were then racked and blended together - 90% of the first, 10% of the second - before being hand bottled straight from the tank - unfined and unfiltered.
Final blend is 65% Solaris, 35% Bacchus.
