Winemaking
Grapes hand-picked in to small crates on 24th October 2023. Whole-bunch pressed, naturally cold settled for 42 hours. Fermented in a Clayver ceramic ‘barrel’, naturally undergoing malo-lactic fermentation following alcoholic fermentation. Aged for on lees for 10 months in ceramic before being moved to 2 French oak barriques to age for a further 6 months before being blended back in tank and hand bottled straight from the tank in March 2025 - unfined and unfiltered.
