Winemaking

Grapes hand-picked in to small crates on 18th October 2024. Whole-bunch pressed, naturally cold settled for 36 hours. Two-thirds fermented in a Clayver ceramic ‘barrel’, one-third fermented in an old oak barrel. Both naturally undergoing malo-lactic fermentation following alcoholic fermentation. Aged on lees for 8 months before being blended together with the barrel portion and going back in to 3 French oak barriques to age for a further 11 months before being hand bottled in May 2026 - unfined and unfiltered.
