Winemaking

Grapes hand-picked on 24th October 2023 in to small crates. 9 days skin contact - 90% destemmed, 10% whole-cluster - pressed off to barrel using a small basket press. Finished fermentation in a two-year old French oak barrel and naturally went through malo-lactic fermentation. Left to settle and age in barrel on lees for 16 months before being racked to tank and bottled by hand in March 2025. Unfined and unfiltered.
