Winemaking

Grapes hand-picked on 18th October 2024 in to small crates. 10 days skin contact - 75% destemmed, 25% whole-cluster - pressed off to barrel using a small basket press. No added yeast - spontaneous fermentation. Finished fermentation in a four-year old French oak barrel and naturally went through malo-lactic fermentation. Left to settle and age in barrel on lees for 18 months before being racked to tank and bottled by hand in April 2026. Unfined and unfiltered.
