Winemaking
Oxfordshire-grown Bacchus, hand-picked in to small crates on 7th October 2025. Whole-bunch pressed, cold settled for 48 hours. Fermented 2 old oak barrels, where the wine also naturally underwent malo-lactic fermentation, before being left to settle.
The two barrels were racked and blended together prior to being hand bottled - unfined and unfiltered.
