Winemaking
Grapes hand-picked in to small crates on 12th Septmeber 2025. Whole-bunch pressed, cold settled for 48 hours. Two-thirds fermented in a ceramic 'barrel', one-third fermented in a stainless steel tank. The two wines were then blended together in tank, where they naturally underwent malo-lactic fermentation, before being left to settle.
Hand bottled in May 2026- unfined and unfiltered.
