Winemaking
Grapes hand-picked on 18th October 2024 in to small crates. 36 hours skin contact, 75% destemmed, 25% whole cluster. Drained-off in to an old French-oak barrel. Fermented in barrel using a pied de cuve and naturally went through malo-lactic fermentation. Allowed to settle on lees for 4 months before being racked and bottled by hand April 2024. Unfined and unfiltered.
