Winemaking
Essex-grown grapes hand-picked on 3rd October 2025 in to small crates. 36 hours skin contact, 90% destemmed, 10% whole cluster. Drained-off in to an old French-oak barrel. Fermented in barrel and naturally went through malo-lactic fermentation.
Oxfordshire-grown grapes hand-picked on 16th October 2025 in to small crates. Whole-bunch pressed and fermented in a stainless steel tank. Naturally completed malo-lactic fermentation.
Both wines allowed to settle on lees for 4 months before being blended and bottled by hand May 2025. Final blend 40% Essex, 60% Oxfordshire. Unfined and unfiltered.
