Winemaking

Grapes picked on 7th October 2023 in to small crates. 9 days skin contact, 100% destemmed. Cold fermentation. Pressed off in a small basket press. Fermented in a two-year old French oak barrel and naturally went through malo-lactic fermentation. Racked and bottled by hand May 2024. Unfined and unfiltered.
