Winemaking

Grapes picked on 17th October 2022 in to small crates. 3 day skin contact, 70% destemmed, 30% whole cluster. Pressed off in pneumatic press. Fermented in barrel, no added yeast. Naturally went through malo-lactic fermentation. Racked and bottled by hand June 2023. Unfined and unfiltered.
