Winemaking

Grapes picked on 24th October 2023 in to small crates. 2 days skin contact, 80% destemmed, 20% whole cluster. Drained-off in to an old French-oak barrel. Fermented in barrel and naturally went through malo-lactic fermentation. Racked and bottled by hand April 2024. Unfined and unfiltered.
