Winemaking
Grapes picked in to small crates on 19th October 2022. Whole-bunch pressed, naturally cold settled for 36 hours. Split between 3 different vessels for fermentation - a ceramic ‘barrel’, small stainless steel tank, and a 12 year old American oak barrel. The wines underwent malo-lactic fermentation before being blended back together and hand bottled straight from the tank - unfined and unfiltered.
