Made from Solaris grown at Dunesforde Vineyard in North Yorkshire, this is a barrel-aged version of the Solaris 2022 released previously. 

The grapes were whole-bunch pressed in a pneumatic press, with the juice cold-settled for 36 hours before being split between three different vessels for fermentation - a ceramic ‘egg’, a 12 year old American oak barrel, and a small stainless steel tank. Following alcoholic and malo-lactic fermentation, the wines were allowed to settle over winter, before being blended back together prior to bottling. The three vessels each brought something different to the fermentations and have helped bring extra layers and complexity to the finished wine. While most of this blend was then bottled for the Solaris 2022, I put 225 litres back in to the old American oak barrel to see how it might develop with some oak ageing. The speed of development was amazing, with the barrel bringing greater depth, character, and even colour to the wine. After 7 months I decided to bottle the wine, by hand, unfined and unfiltered. 

There's so much going on with this wine! There's a definite aged character, real richness and bags of flavour. I get pineapple and coconut (Piña Colada!), with melon and passionfruit. This is such an interesting wine, unlike anything I've ever had before, and I can't believe it's come from grapes grown in Yorkshire!
