I'm really exited to be releasing another single-varietal Solaris - my first since the incredibly popular 2022 one I made from fruit grown at Dunesforde Vineyard in North Yorkshire. While there are some similarities to that wine, this one feels more complete and intriguing. It's got some serious New Zealand Sauvignon Blanc vibes, with a lovely citrus core, and is super refreshing! 

The grapes were grown at Whitehouse Farm vineyard in Wantage, Oxfordshire, and were handpicked on a cool morning 12th September 2025, before being whole-bunch pressed that afternoon and cold-settled for 2 days. 60% of the juice was then transferred to a ceramic 'barrel' for fermentation, while the other 40% was fermented in a stainless steel tank. These two separate wines were then blended together in tank, where they naturally underwent malo-lactic fermentation and were left to settle over winter. Bottled in May 2026 by hand, unfined and unfiltered, producing just 735 finished bottles. 

This is a fresh and summery white wine, with elderflower, gooseberry and a subtle nettle edge. Clean and zippy on the palate, with a long mouth watering finish. If you enjoy Sauvignon Blanc, you'll feel right at home here.
